DETERMINATION OF PROTEIN CONTENT IN DIETARY SUPPLEMENTS FOR SPORTS NUTRITION *

  


Аннотация:
biologically active additives — (BAA) are components of natural or identical natural biologically active substances intended for oral administration or introduction into the composition of food products in order to enrich the diet with biologically active substances or their complexes. Dietary supplements are a concentrated source of almost all the building and regulatory substances necessary for the body, obtained from plant, animal and mineral sources.

Dietary supplements are products that stimulate self-regulating reactions of the body, which helps restore the natural dynamic balance and opens the way to a cure [1,2].A field of science has emerged that connects the basics of dietetics and pharmacology, which is called pharmaconutritionology. The famous Russian scientist academician A. A. Pokrovsky noted that " ... food should be considered not only as a source of energy and building materials, but also as a very complex pharmacological complex." Being metabolized in the body, nutrients are modified into the structural components of cells, as a result of which physiological processes are activated that contribute to improving the quality of life. A disorder of eating habits always leads to adverse consequences. In this regard, it is very important to correctly and expediently choose a persons diet, taking into account the scope of their activity, level of activity, state of health, etc., which is also the prevention of the vast majority of diseases, including cancer [3].In the diet of the average person, there are often no essential elements of nutrition, and dietary supplements help to fill this shortage. They contribute to strengthening the immune response, increasing vitality, resistance to negative environmental influences, improving the lives of people with pathologies and reducing the likelihood of developing common diseases, which ultimately leads to a noticeable improvement in the overall health of the entire population[4].The main reason for using sports supplements is that they help you achieve certain athletic goals. Athletes choose the ingredients of these supplements based on their usability. These supplements are considered as a supplement to the diet, which contains a complete set of essential nutrients for normal human life. Dietary supplements, which are so beneficial for people who exercise, help reduce body fat and increase muscle mass, thereby helping athletes achieve good results. The composition of these products includes amino acids that are important for the bodyIt is difficult to overestimate the role of protein in the life of an athlete. Since the relief of the body, the volume and strength of muscles are the result not only of sports training, but also primarily nutrition.The concept of "proper sports nutrition" is subjective and focuses on the goals and objectives of a particular athlete: some strive to build muscle mass, and some, on the contrary, reduce their volume. But in any case, the key role is played by protein, because it is the main building material of our body[5].Despite all these advantages and detailed studies, this type of supplement still causes controversy about its usefulness and the need to introduce it into the diet.The most popular types of dietary supplements include the following: protein bars, energy supplements, fat burners, creatine-based drugs, caffeine, amino acids, and buffering agents.The relevance of this work is due to the practical significance of the problems associated with the use of sports nutrition, which is an important additional support for beginners and experienced athletes.However, it is worth noting that manufacturers often distort the values of the content of various components in products and dietary supplements are no exception. Often, the data stated on the packaging does not correspond to the true content of substances.The objective of this work is to determine the protein content in protein powders of various brands and compare them with the data on the package[5].Protein powders of three different brands and countries of production a were taken as samples for analysisстран производств. The name of the stamps is not specified, only the sample number and country of manufacture.Samples:1 (Russia)2 (US)3 (Hungary)Before determining the protein content directly in the samples, it is necessary to first determine the moisture content by drying in order to make an appropriate correction to the calculations.Method of determination: the exact mass of the test substance (1.000 g) was placed in pre-weighed buckets. Buxas with slightly opened lids were placed in a drying cabinet heated to 105-110 degrees. Drying was carried out for several hours, and then the bucs were cooled in a desiccator and weighed. And so they continued to dry to a constant mass. The weight difference between the two subsequent weighings should not exceed 0.0005 g. The first weighting of the suspension was carried out after 3-4 hours, and each subsequent one after 1-2 hours. Weighing is carried out with closed buckets [6].Drying result:1(Russia) – 4.8%2 (USA) – 3.4%3 (Hungary) – 4.5%Protein DefinitionsProteins were determined by the Kjeldahl method, as it is an arbitration method and is suitable for determining protein in food products.The Kjeldahl method is a method for determining total nitrogen in a compound or mixture. The method is based on the decomposition of samples with concentrated sulfuric acid, which converts organic nitrogen to inorganic ammonium salts under the conditions of a catalyst, and then converts ammonium salts to ammonia under alkaline conditions. It is distilled with water vapor and absorbed with an excess boric or sulfuric acid solution, and then titrated with a standard alkali solution to calculate the amount of nitrogen in the sample [7].The results of the experiment show the percentage of protein in 100 g of the test substance.1(Russia) – 63.8% (74,9 on the package)2 (USA) – 20.5% (15 on the package)3 (Hungary) – 64.3% (75 on the package)The results showed a discrepancy in the amount of protein indicated on the package. In 2samples, the actual protein content was lower than stated by the manufacturer in the range of 10-20 g per 100g of product. This may be due to the high cost of protein concentrate and its replacement with cheaper non-protein products. In one sample (USA), the content was higher than the manufacturers stated content.
